Egg Rice
- Eggs – 3 numbers
- Onion – 1 large(chopped)
- Carrot – 1/4 cup
- Green peas – 1/4 cup(cooked)
- Ghee – 1 teaspoon
- Chopped garlic – 1 tablespoon
- Green chilly – 1 (chopped)
- Pepper – 1/2 teaspoon
- Cooked basmati rice – 1 1/2 cup
- Salt to taste
- Coconut oil – 1 teaspoon
METHOD
Heat up a iron skillet add 1 teaspoon of coconut oil add eggs and scramble it with a pinch of salt and pepper. Keep it aside. On the same skillet add butter and saute garlic for a minute followed by onion, carrot, green chilly and green peas. Do not over cook the vegetables. After a minute add cooked basmati rice, eggs and mix it well. Check the salt and adjust it if needed. Enjoy your healthy and easy egg rice along with some coriander chutney or tomato salsa.
